1/2 cup chopped onion
1/3 cup chopped celery
2 cups shredded, cooked ham
2-3 medium sweet potatoes
2 – 2 1/2 cups chicken broth or homemade chicken stock
2 cups water
1-2 tsp salt
1 tsp black pepper
1/4 cup arrowroot
2 cups coconut milk
1/4 cup butter, melted
1.) Combine onion, celery, ham, sweet potatoes, chicken broth, water, salt and pepper in large pot. (* You might want to reduce salt if using broth and not homemade stock.)
2.) Bring pot to a boil and then turn down medium/low in order to keep at a simmer. Cook until the sweet potatoes are tender when pierced with a folk.
3.) Meanwhile, whisk together the arrowroot and part of the coconut milk, about half a cup in a medium saucepan until smooth. Add the rest of the coconut milk and butter and bring to a boil. Boil one minute to thicken.
4.) Add the thickness milk mixture to the soup, after the sweet potatoes are tender, and stir until well incorporated.
5.) Eat immediately!
