Unfortunately I spent the majority of June out of town, which caused me to not blog much. On the other hand, in my absence with a lot of help from Mother Nature, and lots of rain my garden grew and grew. I have found myself this July with fresh herbs, broccoli, tomatoes, peppers, beets, squash and cucumber ready for the plucking to name a few.
I cannot think of a better side dish in the hot summer heat than a fresh cucumber.
1 cucumber, peeled and sliced
1 tablespoon coarsely chopped fresh dill
Salt and pepper for taste
3 to 4 tablespoons vinegar (I used apple cider vinegar)
1 red onion (optional)
The dill and cucumber came from my garden, if you don’t have a garden I recommend the farmers market for the freshest produce and best taste.
Combine all ingredients in a bowl; cover and refrigerate until ready to serve. Remember taste is always king, if you think you need more vinegar…just add it. This receipt is really a guided amount.
