Immersion Blender Mayonnaise


If you have been following my blog and haven’t bought an immersion blender, maybe this will persuade you to send the 30 bucks.  I have tried other Paleo friendly mayonnaise recipes and they have not worked, but this mayo making method is full proof and comes from Serious Eats.


1 large egg yolk

1 tablespoon fresh lemon juice

1 tablespoon water

1 teaspoon Dijon mustard

1 cup avocado oil

Kosher salt


1.)    Combine egg yolk, lemon juice, water, and mustard into immersion blender cup or tall and narrow mixing dish.  Then add the oil to the cup.

2.)    Place the bottom of the immersion blender at the bottom of the cup/mixing bowl, and pulse away.  As the emulsion forms, carefully lift and tilt the head of the immersion blender so that the mayonnaise forms evenly.

3.)    Add salt to taste.  If you are not using the mayo right away, cover and store it in your fridge.

Yields: 1 Cup

*It will keep for up to a week or two.  Bottom line, if it tastes bad, throw it out and make a new only takes 5 minutes.
