Kitchen Sink Meat Loaf – Paleo Style


The secret to meat loaf is to play around with what you have in your refrigerator.  Stick to a couple staple items and get around the amount of each ingredient and you’ll love the results.



– 1 pound ground beef

– 1/2 to 1 cup shredded carrots

– 1/2 to 1 cup chopped onion

– 1/2 to 1 cup pepper (any color will work)

– 1 fresh tomato chopped

– 1/2 – 3/4 cup almond meal

– 2 eggs

– pinch or so of salt

– pinch or so of pepper


– 1 can tomato paste

– 1 tablespoon dijion muster

– pinch of chiller pepper

– pinch paprika

– pinch red pepper

– 1 tablespoon balsamic vinegar


1.) Preheat oven to 375 degrees.

2.) Mix all loaf ingredients together.  It works best if you just use your hands.

3.) Put mixture in greased loaf pan or form loaf and put on pan.  I grease with butter, olive oil, coconut oil of ghee.


4.) Bake at 375 degrees for 45 minutes.

5.) In separate bowl, whisk all ingredients  for your sauce.

6.) After 45 minutes, pull loaf from the oven and turn heat up to 450 degrees.

7.) Frost the loaf with the sauce.  Make sure to use all the sauce on the loaf!

8.) Once the oven is up to 450 degrees , put coated loaf back in the oven for and additional 15 minutes.

9.) If it looks watery , leave it in for 5 more minutes until it reaches the desired texture.

10.) Once done, let stand until cool and then enjoy!

NOTE: This goes best with a cauliflower mash!!!
