3 tablespoons olive oil
4-5 pounds beef tip roast, cut into 1 inch strips
1 large onion, roughly chopped
3 garlic cloves, smashed
1 pepper, chopped
Handful of mushrooms
3 teaspoons ground coriander
3 teaspoons ground cumin
½ -1 can of chipotle peppers (depending on how spicy you like it)
1 cup beef broth
½ cup water (to rinse out chipotle peppers)
1.) Place the oil into the pressure cooker over medium heat. Brown the beef strips on all sides in the hot oil.
2.) Stir in the onion, garlic cloves, pepper, mushrooms, coriander, cumin, chipotle peppers, beef broth and water.
3.) Bring the cooker up to a pressure, and reduce heat to keep pressure steady.
4.) Cook under medium steady pressure for 30-45 minutes.
5.) Carefully release pressure, remove lid and enjoy.
I used the vegetables and meat to make little taco’s with corn tortilla shells, but I think it could also be eaten plan with maybe a topping of guacamole.
