Sunny Side Up Turnip Hash



4 Turnips, chopped

1 Medium Onion, chopped

1/2 Tbs Herbs De Province (mixture of herbs – I used basil, thyme and lavender and mixed together)

1/2 Tbs Garlic Powder

1/2 tsp Salt

1/2 tsp Freshly Grated Ginger

Pinch of Nutmeg

Dash of Cinnamon

2 Eggs, whisked

4 Eggs, sunny side up

2 Tbs Olive Oil


1.) In a large bowl combine turnips, onions, herbs de province, garlic salt. (*If you like a little sweetness add ginger, nutmeg and cinnamon.)  Add in whisked eggs, stirring to ensure even coat throughout.


2.) In a large skillet, add oil to coat pan.  Use a wooden spoon and stir has until it is golden brown crisp.

3.) While the hash is finishing up, cook 4 eggs sunny side up.

4.) Place turnip hash on plate and then place sunny side up egg directly on hash.

5.) Enjoy!

Yields: 4 Servings
