I used fresh zucchini, basil, chives and pepper out of my garden, which gave this dish extra unbelievably delicious flavor.
1 extra large zucchini or 3 medium ones (shredded about 3 cups)
1 teaspoon salt and pepper
3 large eggs (beaten)
1 medium pepper (chopped)
1 tablespoon chives (chopped)
1 tablespoon fresh basil (chopped)
3 tablespoons almond butter
Butter (for skillet)
2.) Put shredded zucchini in mixing bowl, combine all ingredients.
3.) Heat a few teaspoons of butter in a large skillet or griddle over medium heat. Spoons a few tablespoons of the zucchini batter on the skillet for each pancake and cook until browned on both sides.
