I got the idea for this from Nom Nom Paleo, then I completely changed the recipe.
3-5 big tomatoes
3-5 cloves of garlic
1/4 Cup olive oil
Bunch of fresh basil
1-3 teaspoon of salt
1 pound ground beef
1 bell pepper
1 small medium heat jalapeño pepper (seeds removed)
1 big zucchini or 4-6 small
Pepper to taste
1.) Blend up tomatoes and put into saucepan.
2.) Mash, chop or mince garlic cloves, then sauté for 30 seconds in 1/4 Cup olive oil (be careful not to burn the garlic). Add to red sauce, garlic and all.
3.) Add 1-3 tsp of salt and a handful of chopped fresh basil
4.) Chop up bell and jalapeño and mix with ground beef, and then roll into meat balls.
5.) Cook meatballs on skillet completely and add to red sauce.
6.) Set red sauce aside to simmer while you make your zoodles.
1.) Take a carrot peeler and peel the entire zucchini like you would a carrot.
2.) Stir fry in a little bit of olive oil until tender.
3.) Plate the zoodles and cover with red sauce and meatballs.
This recipe really is easy, don’t get caught up in the amounts…just taste the sauce and make adjustments as needed.
